Cooking with Cannabis When I cook with Cannabis, I start with a basic "cannabis flour". I activate the flour by sautéing it lightly in oil, and then I use the oil and flour mixture in a conventional recipe. In the case of brownies, I like to add extra chocolate to mask any residual cannabis flavor. Cannabis Flour Microwave the cannabis twice, 20 seconds each time. The material should be crisp. Separate the crisp and crumbly material from the stems. Using a spice or coffee grinder, grind the crumbly stuff to a fine powder. (A blender works fine for larger amounts of material.) Activate the Flour Cannabis contains a variety of cannabinoids, often with a large component of relatively inactive THC-A. At around 220°F, THC-A converts to the very active THC and releases water and carbon dioxide. This process is called "decarboxylation". When smoking, decarboxylation happens automatically. When eating, one must heat the material to activate it. I like to saute' cannabis flour in oil before adding it to a recipe. Don't overdo the heat or you will boil off the cannabinoids. Add 1/4 cup oil to a pan. Mix in 1/4 oz of cannabis flour Gently heat the mixture until it starts bubbling. When the bubbling starts to slow down, stop. Making Brownies Brownies are a great way to pack cannabis into a small morsel. The chocolate masks the cannabis flavor, and brownies are easy to store. Besides, I'm a bit of chocoholic, so I satisfy two goals with one bite. Any brownie recipe will do. I like to use the Ghiradelli Triple Chocolate mix, and I like to add extra chocolate. I won't repeat the recipe on the box. For normal "city" brownies, I leave them soft and store them in the freezer. I add extra chocolate chips and reduce the cooking time. For "backpacking" brownies, I like them hard and crisp so they don't fall apart after spending time at ambient temperature. I add extra cocoa powder and increase the cooking time. Dosage With good cannabis flour, it is very easy to consume too much cannabis. Keep careful track of how much flour you use. I recommend measuring out the flour with a pocket scale. I've found 1/3 gram of flour per dose is a good starting point. I've used as much as 2 grams, but that was waaay too much. When eaten, cannabis takes about two hours to reach its full potential. I strongly recommend "calibrating" your flour whenever you make a new batch. Take 1/2 of a dose and wait the full two hours. Ideally, you will have a mild cannabis effect without overdoing it. Enjoy!
