Peanut Butter Cookies
Yield: ~60 1.5in cookies
Preheat ovent to 375
Beat until soft:
1/2 cup butter
Sift:
1/2 cup brown sugar
1/2 cup granulated sugar
Add sugar mix gradually, beating until creamy.
Beat in:
1 egg (or 1 tsp baking soda, 1 Tbsp vinegar)
1 cup peanut butter
1/2 tsp salt
1/2 tsp baking soda
Add to mixture:
1 1/2 cups sifted flower
1 tsp vanilla
Put on a greased sheet:
Roll dough into small balls
Flatten with a fork
Bake for 15 min.
Result: egg substitute didn't work. The cookies were VERY crunbly and
fell apart. A "wetter" cookie recipe is needed.
