Pineapple Upside Down Cake

With just 1 egg the famous dessert that drives the world crazy! With no oven!

Time: ~30min
Servings: 6

Ingredients

Directions

  1. In 10" non-stick pan (with cover), melt 1 1/2 Tbsp butter

  2. Add 1 Tbsp sugar, and stir over medium heat until caramelized

  3. Add the 7 pineapple rings, and cook for 2 min, then let them cool

  4. Add candied cherries to pineapple (optional)

Make the batter.

  1. Whisk 1 egg with, 1/4 cup sugar, pinch of salt, and vanilla

  2. Whisk in 1/4 cup vegetable oil

  3. Whisk in 1/2 cup milk

  4. Add 1 1/4 cups flour and 8g baking powder. Mix until smooth.

  5. Pour over pineapples, cover and cook on low for 10 to 15 min, until toothpick comes out clean.

  6. Turn over onto an oiled plate, and slide it back into pan.

  7. Cook for 5 min

Done.
