Turkey Roast

If the bird is lean, rub it with melted shortening.

Place turkey on a greased rack uncovered in a roasting pan. Put water in pan.

Preheat oven to 450oF

Put turkey in oven, and reduce heat to 350oF

Baste frequently with the pan drippings.

After 1 hour cover the breast with a cloth that has been dipped in melted shortening

Remove the cloth at the last 1/2 hour.

Cook to an internal temperature of 190oF
